Mocha Ricotta Umbriaca: A Toast to Elle Decor India








A belated but heartfelt thank you to Elle Decor India for extending a lovely gesture to me: my first contributing editorial!

I'd show you the pictures, but you've seen them a zillion times (they're Trevor Tondro's).  

To celebrate, my King made lovely Ricotta Umbriaca (Drunken Ricotta).  He adds chocolate for...well, since does one need a reason?  Putting it in the freezer makes it like ice cream.  It's no-cook and so easy even kids or lazy adults like me can make it.


Ricotta Umbriaca Mocha

1 cup ricotta cheese
1/3 cup confectioner’s sugar
1 Tbs instant coffee
1 Tbs (heaping) unsweetened cocoa powder
2 oz of coffee liqueur (optional)
Stir in all ingredients and chill in the fridge for a pudding-like texture.
Place in the freezer for an hour or so and it is like ice cream.

Yield: 2-3 servings
